6 medium-sized carrots, preferably rainbow or heirloom for color

3 tablespoons olive oil

2 tablespoons honey (or maple syrup for a vegan option)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon balsamic vinegar

2 tablespoons chopped fresh parsley (for garnish)

Optional: Crumbled feta or goat cheese for topping

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Carrots: Wash and peel the carrots. Trim the ends and pat them dry. To create the Hasselback effect, place a carrot between two chopsticks or the handles of wooden spoons. Carefully slice the carrot at 1/4-inch intervals down to the chopsticks, making sure not to cut all the way through. Repeat with the remaining carrots.

      Make the Glaze: In a small bowl, whisk together the olive oil, honey, thyme, garlic powder, salt, pepper, and balsamic vinegar until well combined.

        Coat the Carrots: Place the arranged carrots on a baking sheet lined with parchment paper. Brush the honey glaze generously over the carrots, ensuring the glaze seeps into the cuts.
