Honey Glazed Meatball and Veggie Skewers

For the Meatballs:

1 lb ground beef (or turkey for a lighter option)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

1 tsp dried Italian seasoning

Salt and pepper to taste

For the Honey Glaze:

1/3 cup honey

3 tbsp soy sauce

1 tbsp apple cider vinegar

1 tbsp Dijon mustard

Pinch of red pepper flakes (optional for spice)

For the Veggies:

1 red bell pepper, cut into chunks

1 zucchini, sliced into 1-inch rounds

1 red onion, cut into wedges

1 cup cherry tomatoes

2 tbsp olive oil

Salt and pepper to taste

Additional:

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior to cooking)

Prepare the Meatballs: In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, onion, garlic, egg, Italian seasoning, salt, and pepper. Mix until just combined, being careful not to overmix.

    Form Meatballs: Use your hands to form the meat mixture into 1-inch meatballs. You should get about 20-24 meatballs.

      Make the Honey Glaze: In a small bowl, whisk together honey, soy sauce, apple cider vinegar, Dijon mustard, and red pepper flakes until smooth.

        Preheat the Grill or Oven: Preheat your grill to medium-high heat or your oven to 425°F (220°C).

          Prepare the Veggies: In a separate bowl, toss the red bell pepper, zucchini, red onion, and cherry tomatoes with olive oil, salt, and pepper.

            Assemble the Skewers: On each skewer, alternate threading meatballs and veggie pieces. For example, thread a meatball, followed by a slice of zucchini, a bell pepper chunk, a red onion wedge, and a cherry tomato. Repeat until the skewer is filled, leaving space at the ends for handling.

              Cook the Skewers: Grill or bake the skewers for about 15-20 minutes, turning occasionally, until the meatballs are fully cooked (internal temperature should reach 160°F or 71°C). Brush with the honey glaze during the last 5 minutes of cooking for a sticky finish.

                Serve: Remove skewers from the grill or oven and let cool for a couple of minutes. Drizzle any remaining honey glaze over the skewers and serve with your favorite dipping sauce or over a bed of rice for a complete meal.
