Honey Glazed Salmon with Asparagus

2 salmon fillets (6 oz each)

2 tablespoons honey

2 tablespoons soy sauce

1 tablespoon Dijon mustard

1 tablespoon olive oil

1 garlic clove, minced

1 tablespoon fresh ginger, minced

Salt and pepper to taste

1 bunch asparagus, trimmed

Lemon wedges, for serving

Fresh parsley, chopped, for garnish

Instructions
 

Prepare the Marinade: In a small bowl, whisk together honey, soy sauce, Dijon mustard, olive oil, minced garlic, and ginger. Set aside a quarter of the marinade for later.

    Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the remaining marinade over the salmon, ensuring it’s well-coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Prepare the Asparagus: On a baking sheet, arrange the trimmed asparagus. Drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.

          Bake the Asparagus: Place the asparagus in the preheated oven and roast for 10 minutes, or until tender but still crisp.

            Cook the Salmon: After the asparagus has been in the oven for 10 minutes, remove the baking sheet and place the marinated salmon fillets skin-side down on the sheet next to the asparagus. Pour the reserved marinade over the salmon.

              Roast Together: Return the baking sheet to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

                Garnish and Serve: Once cooked, remove from the oven. Serve the salmon with the roasted asparagus, drizzling any remaining marinade from the baking sheet over the top. Garnish with chopped parsley and lemon wedges on the side for an extra zing!
