Honey Mustard Chicken Wraps for Busy Nights

2 cups cooked chicken, shredded or diced (rotisserie chicken works great)

1/4 cup honey

1/4 cup Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon olive oil

Salt and pepper, to taste

4 large flour tortillas or whole wheat wraps

1 cup mixed greens (spinach, arugula, or lettuce)

1 cup sliced cucumbers

1/2 cup shredded carrots

1/2 cup sliced bell peppers (any color)

Optional: 1/4 cup crumbled feta cheese or shredded cheddar cheese

Instructions
 

Prepare the Honey Mustard Sauce: In a medium bowl, whisk together honey, Dijon mustard, apple cider vinegar, olive oil, salt, and pepper until well combined. Set aside.

    Combine Chicken and Sauce: In a large mixing bowl, add the shredded or diced chicken and pour about half of the honey mustard sauce over it. Toss to coat the chicken evenly.

      Assemble the Wraps: Lay a tortilla flat on a clean surface. Start by placing a generous handful of mixed greens in the center of the tortilla, followed by a portion of the honey mustard chicken mixture. Add cucumbers, shredded carrots, and sliced bell peppers on top. If desired, sprinkle with feta cheese or cheddar.

        Wrap it Up: Fold the sides of the tortilla inwards over the filling, then roll the bottom of the tortilla up to enclose the filling. Tuck it in tightly and continue rolling until the wrap is secure. Repeat this process with the remaining tortillas and fillings.
