Ingredients

6 bone-in, skin-on chicken thighs

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Make the Marinade: In a bowl, whisk together the honey, Dijon mustard, olive oil, minced garlic, apple cider vinegar, smoked paprika, thyme, salt, and pepper until well combined.

Prepare the Chicken: Pat the chicken thighs dry with paper towels to ensure they get crispy in the oven. Season both sides lightly with salt and pepper.

Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the honey mustard marinade over the chicken, making sure each piece is thoroughly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for stronger flavor.

Bake the Chicken: Remove the chicken thighs from the marinade (reserving the marinade) and place them skin-side up in a baking dish. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the skin is golden and crispy.

Glaze the Chicken: In the last 5 minutes of baking, brush the reserved marinade over the chicken thighs to enhance flavor and add a sticky glaze.

Serve: Once cooked, remove the chicken from the oven and let it rest for a few minutes. Garnish with fresh chopped parsley before serving. Pair with steamed vegetables or rice for a complete meal.
