Ingredients

4 boneless, skinless chicken thighs (or breasts)

1 cup pineapple juice

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup ketchup

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons rice vinegar

1 tablespoon sesame oil

1/2 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional)

2 green onions, chopped (for garnish)

Fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions

Prepare Marinade: In a large mixing bowl, combine pineapple juice, soy sauce, brown sugar, ketchup, garlic, ginger, rice vinegar, sesame oil, black pepper, and crushed red pepper flakes (if desired). Whisk until the sugar is dissolved and everything is well mixed.

Marinate Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for deeper flavor.

Preheat Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). If using a grill pan, heat it over medium heat on the stovetop.

Grill Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Reserve the marinade for basting. Grill the chicken for about 6-8 minutes per side, or until fully cooked (internal temperature reaches 165°F). Brush the chicken with the reserved marinade during the last few minutes of grilling for added flavor.

Rest and Serve: Once cooked, transfer the chicken to a plate and let it rest for 5 minutes. Garnish with chopped green onions and fresh cilantro before serving. Serve with lime wedges on the side for a zesty finish.

Pair it Right: This dish pairs beautifully with steamed rice, grilled vegetables, or a light salad for a refreshing meal.
