Huli Huli Chicken with Huli Huli Sauce

Ingredients
  

For the Huli Huli Chicken:

4 boneless, skinless chicken thighs

1 tablespoon olive oil

Salt and pepper, to taste

2 green onions, thinly sliced (for garnish)

Sesame seeds (for garnish)

For the Huli Huli Sauce:

1 cup pineapple juice

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup ketchup

2 tablespoons rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 teaspoon red pepper flakes (optional, for heat)

Instructions
 

Make the Huli Huli Sauce:

    - In a medium saucepan over medium heat, combine pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, minced garlic, minced ginger, and red pepper flakes.

      - Stir well and bring to a simmer.

        - Reduce the heat to low and let simmer for about 10-15 minutes, or until the sauce thickens slightly. Remove from heat and set aside.

          Prepare the Chicken:

            - Preheat your grill or grill pan over medium-high heat. If using an outdoor grill, grease the grates with oil to prevent sticking.

              - Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.

                Grill the Chicken:

                  - Brush both sides of the chicken with olive oil.

                    - Place the chicken on the grill and cook for about 5 minutes on one side. Flip the chicken and cook for another 5 minutes.

                      - Baste the chicken with the Huli Huli sauce during the last 2 minutes of cooking, allowing it to caramelize slightly on the grill.

                        Final Touches:

                          - Once the chicken reaches an internal temperature of 165°F (75°C) and has nice grill marks, remove it from the heat.

                            - Let the chicken rest for a few minutes before slicing it.

                              Serve:

                                - Slice the chicken and place it on a serving platter.

                                  - Drizzle with additional Huli Huli sauce if desired and garnish with sliced green onions and sesame seeds.
