12 large portobello or cremini mushrooms, stems removed

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Salt and pepper to taste

Fresh herbs (parsley or basil) for garnish

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Mushroom Caps: Gently clean the mushrooms with a damp cloth. Place them on a baking sheet, hollow side up.

      Make the Filling: In a medium bowl, combine the softened cream cheese, chopped spinach, chopped artichoke hearts, minced garlic, Parmesan cheese, and half of the mozzarella cheese. Stir until well mixed. Season with salt, pepper, and red pepper flakes if using.

        Stuff the Mushrooms: Using a spoon, generously fill each mushroom cap with the spinach and artichoke mixture.

          Top with Cheese: Sprinkle the remaining mozzarella cheese over each stuffed mushroom.

            Drizzle with Olive Oil: Lightly drizzle olive oil over the filled mushrooms to help with browning.
