2 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon Italian seasoning

4 slices of fresh mozzarella cheese

2 ripe tomatoes, sliced

Fresh basil leaves (about 10-12)

4 ciabatta rolls or panini bread

Balsamic glaze (for drizzling)

Optional: pesto for added flavor

Season the Chicken: Begin by seasoning the chicken breasts with salt, pepper, and Italian seasoning. Make sure to coat them evenly.

    Cook the Chicken: In a medium skillet, heat 2 tablespoons of olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown. Once cooked, remove from heat and let it rest for a few minutes before slicing it thinly.

      Prepare the Panini: Preheat a panini press or a grill pan over medium heat. Cut the ciabatta rolls in half and lay them open. On one half of each roll, layer a slice of mozzarella cheese, some sliced chicken, fresh tomato slices, and a few basil leaves. If using, add a spread of pesto on the other half of the roll.

        Assemble the Panini: Place the other half of the bread on top and press down gently to hold the fillings together.

          Grill the Panini: If using a panini press, carefully place the sandwiches inside and close it. Cook for about 5 minutes, or until the bread is golden and crispy, and the cheese has melted. If using a grill pan, press down with a heavy skillet, flipping halfway through for a few minutes on each side.
