1 pound fresh salmon fillet (skinless, boneless)

1/2 cup breadcrumbs (preferably panko)

1/4 cup finely chopped red onion

1/4 cup fresh parsley, chopped

1/4 cup mayonnaise

1 large egg

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon lemon zest

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil (for frying)

Lemon wedges (for serving)

Instructions
 

Start by preparing the salmon: place the salmon fillet in a food processor and pulse until it reaches a chunky consistency—do not over-process.

    In a large mixing bowl, combine the processed salmon, breadcrumbs, red onion, parsley, mayonnaise, egg, Dijon mustard, garlic powder, lemon zest, salt, and pepper. Mix gently until all ingredients are well incorporated.

      Divide the mixture into equal portions (about 1/4 cup each) and shape them into patties.

        Heat olive oil in a non-stick skillet over medium heat. Once hot, place the patties in the skillet (make sure not to overcrowd the pan).

          Cook the patties for 4-5 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

            Serve the salmon patties warm with lemon wedges on the side for drizzling.
