Kielbasa Potato Soup with a Twist

Ingredients
  

1 lb smoked kielbasa, sliced into bite-sized pieces

4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 cup frozen corn

1 cup kale, chopped (or spinach)

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Optional: 1/2 teaspoon red pepper flakes for heat

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant (about 3-5 minutes).

    Stir in the sliced kielbasa and cook until browned (about 5-7 minutes).

      Add the diced potatoes to the pot, followed by the chicken broth, smoked paprika, thyme, and season with salt and pepper. Bring to a boil, then reduce the heat to a simmer.

        Let the soup simmer for 15-20 minutes, or until the potatoes are tender.

          Stir in the frozen corn and chopped kale (or spinach) and cook for an additional 5 minutes.

            Reduce heat to low and gradually add in the heavy cream, stirring until fully incorporated. Adjust seasoning with salt, pepper, and red pepper flakes if desired.

              Serve hot, garnishing each bowl with fresh parsley.
