Korean BBQ Beef Tacos – Sweet, Savory & Spicy!

1 lb (450g) beef brisket or sirloin, thinly sliced against the grain

1/4 cup soy sauce

2 tablespoons brown sugar

2 tablespoons sesame oil

1 tablespoon rice vinegar

1 tablespoon grated ginger

2 cloves garlic, minced

1-2 teaspoons gochujang (Korean red chili paste) – adjust based on spice preference

1 tablespoon sesame seeds

2 green onions, finely sliced (for garnish)

For the Tacos:

8 small corn or flour tortillas

1 cup shredded red cabbage

1/2 cup diced cucumber

1/2 cup fresh cilantro leaves

1 avocado, sliced

Lime wedges (for serving)

For the Spicy Kimchi Slaw:

1 cup kimchi, chopped

1 tablespoon mayo

1 teaspoon sesame oil

1 tablespoon lime juice

Prepare the Marinade:

    In a medium bowl, combine soy sauce, brown sugar, sesame oil, rice vinegar, grated ginger, minced garlic, and gochujang. Mix until well combined.

      Marinate the Beef:

        Place the sliced beef in a resealable bag or shallow dish. Pour the marinade over the beef, ensuring each piece is coated. Seal the bag (or cover the dish) and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

          Make the Spicy Kimchi Slaw:

            In a small bowl, mix chopped kimchi, mayo, sesame oil, and lime juice until fully incorporated. Adjust the level of mayo and lime juice to taste.

              Cook the Beef:

                Heat a large skillet or grill pan over medium-high heat. Once hot, add the marinated beef in a single layer (you may need to do this in batches). Cook for about 2-3 minutes per side until the beef is caramelized and cooked through. Sprinkle sesame seeds on top while cooking.

                  Warm the Tortillas:

                    In a separate pan or grill, warm the tortillas for about 30 seconds on each side, or until they are pliable and slightly toasted.

                      Assemble the Tacos:

                        On each tortilla, layer a generous amount of the grilled Korean BBQ beef, followed by a handful of shredded red cabbage, diced cucumber, and a few slices of avocado.

                          Add the Kimchi Slaw:

                            Top each taco with a spoonful of spicy kimchi slaw and garnish with fresh cilantro and sliced green onions.

                              Serve:
