Korean BBQ Beef Tacos – Sweet, Savory & Spicy!

For the Marinade:

1 lb flank steak or ribeye, thinly sliced

1/4 cup soy sauce

2 tbsp brown sugar

1 tbsp sesame oil

2 cloves garlic, minced

1 tbsp grated fresh ginger

1 tsp gochujang (Korean red chili paste)

1 tbsp rice vinegar

1 tsp black pepper

1 tbsp sesame seeds

2 green onions, chopped (for garnish)

For the Tacos:

8 small corn or flour tortillas

1 cup kimchi (store-bought or homemade)

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Instructions
 

Prepare the Marinade: In a mixing bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, gochujang, rice vinegar, black pepper, and sesame seeds. Whisk until the sugar dissolves.

    Marinate the Beef: Add the thinly sliced beef to the marinade, ensuring that all pieces are well-coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).

      Cook the Beef: Heat a grill or a large skillet over medium-high heat. Once hot, add the marinated beef and cook for about 2-3 minutes on each side until caramelized and cooked through. Remove from heat and let it rest for a couple of minutes before slicing.

        Warm the Tortillas: While the beef is resting, warm the tortillas either in the skillet or directly over the flame for a few seconds on each side until soft and pliable.

          Assemble the Tacos: On each tortilla, layer the cooked beef, a spoonful of kimchi, slices of avocado, and a sprinkle of fresh cilantro.

            Serve: Squeeze fresh lime juice over the top and serve with additional lime wedges on the side for a burst of acidity.
