Ingredients

For the loaf:

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

Zest of 1 lemon

½ cup buttermilk

1 ½ cups fresh blueberries (or frozen, thawed and drained)

For the lemon glaze:

1 cup powdered sugar

2-3 tbsp fresh lemon juice

Zest of 1 lemon

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and sugar together using an electric mixer on medium speed until the mixture is light and fluffy (about 3-5 minutes).

Add Eggs and Flavorings: Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract and lemon zest until well blended.

Combine Wet and Dry: Gradually add the dry ingredients to the butter mixture in three parts, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined. Do not overmix.

Fold in Blueberries: Gently fold in the blueberries using a rubber spatula, being careful not to break them up too much.

Bake the Loaf: Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, cover it loosely with aluminum foil.

Cool: Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Prepare the Glaze: While the loaf is cooling, make the lemon glaze by mixing the powdered sugar with the fresh lemon juice and zest in a small bowl until smooth. Adjust the consistency as desired by adding more lemon juice or powdered sugar.

Glaze the Loaf: Once the loaf is completely cooled, drizzle the lemon glaze over the top for a delightful citrus finish.

Serve and Enjoy: Slice your lemon blueberry loaf and serve with a cup of tea or coffee for a perfect afternoon treat!
