Lemon Blueberry Yogurt Bars

For the Crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the Yogurt Filling:

2 cups plain Greek yogurt

1/2 cup honey or maple syrup (adjust for sweetness)

1/4 cup freshly squeezed lemon juice (about 2 large lemons)

Zest of 1 lemon

1 teaspoon vanilla extract

1 1/2 cups fresh blueberries (or frozen, thawed and drained)

For the Topping:

1 tablespoon lemon zest (for garnish)

Fresh mint leaves (optional, for garnish)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, mix together graham cracker crumbs, granulated sugar, and melted butter until well combined.

        - Press the mixture firmly into the bottom of an 8x8-inch (20x20 cm) baking dish to form an even layer.

          - Bake in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and let cool completely.

            Make the Yogurt Filling:

              - In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), lemon juice, lemon zest, and vanilla extract. Mix until smooth and creamy, ensuring there are no lumps.

                - Gently fold in the fresh blueberries, taking care not to crush them.

                  Assemble the Bars:

                    - Once the crust has cooled, pour the yogurt filling over the crust, spreading it into an even layer.

                      - Tap the dish lightly on the counter to remove any air bubbles.

                        Chill:

                          - Cover the dish with plastic wrap and place it in the refrigerator for at least 4 hours, or until set. Overnight chilling is even better for firm bars.

                            Slice and Serve:

                              - Once set, lift the bars out of the dish using the edges of the parchment paper (if used) or simply cut directly in the dish.

                                - Slice into squares or rectangles.
