Ingredients

1 pound large shrimp, peeled and deveined

8 ounces linguine or spaghetti

4 tablespoons unsalted butter

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust for spice preference)

Zest of 1 lemon

1/4 cup freshly squeezed lemon juice (about 2 lemons)

1/2 cup low-sodium chicken broth (or white wine)

Salt and freshly ground black pepper, to taste

1/4 cup chopped fresh parsley

Lemon wedges, for serving

Grated Parmesan cheese, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Prepare the Shrimp: In a large skillet over medium heat, add the olive oil and 2 tablespoons of butter. Once the butter has melted, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant, taking care not to brown the garlic.

Cook the Shrimp: Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper. Cook for about 2-3 minutes on each side, or until the shrimp turns pink and opaque.

Add Lemon and Broth: Pour in the chicken broth (or white wine), freshly squeezed lemon juice, and lemon zest. Bring the mixture to a gentle simmer, allowing the flavors to meld for about 2-3 minutes.

Combine with Pasta: Add the cooked linguine to the skillet, tossing gently to combine everything. If the sauce seems too thick, gradually add some reserved pasta water until you reach your desired consistency.

Finish with Butter and Parsley: Remove the skillet from heat and stir in the remaining 2 tablespoons of butter until melted. Finish with chopped parsley, tossing well to incorporate.

Serve: Plate the shrimp scampi with a generous squeeze of fresh lemon juice over the top. Garnish with grated Parmesan cheese and serve alongside lemon wedges for extra zest.
