Ingredients

1 cup all-purpose flour

1/2 cup sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup cream cheese, softened

1/4 cup unsalted butter, softened

1 large egg

1/4 cup milk

Zest of 1 lemon

2 tablespoons fresh lemon juice

1/2 teaspoon vanilla extract

Optional: powdered sugar for dusting or lemon glaze for topping

Instructions

Preheat Your Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease lightly with cooking spray.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Cream Butter and Cheese: In a large bowl, beat together the softened cream cheese and butter using an electric mixer until smooth and creamy.

Add Egg and Flavorings: Add the egg to the cream cheese mixture and beat until fully incorporated. Then stir in the milk, lemon zest, lemon juice, and vanilla extract. Mix until just combined.

Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until no dry bits remain. Be careful not to over-mix; it's okay if the batter is a little lumpy.

Fill Muffin Cups: Scoop the batter evenly into the prepared muffin tin, filling each cup to about 3/4 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool and Serve: Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely. Dust with powdered sugar or drizzle with lemon glaze if desired before serving.
