For the Crust and Topping:

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 cup unsalted butter, softened

1/4 teaspoon salt

1/2 cup rolled oats

For the Lemon Filling:

2 large eggs

1 cup granulated sugar

1/4 cup freshly squeezed lemon juice (about 2 lemons)

Zest of 1 lemon

1/4 cup all-purpose flour

1/2 teaspoon baking powder

A pinch of salt

Powdered sugar for dusting (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    In a medium bowl, combine 1 cup flour, 1/2 cup sugar, 1/4 teaspoon salt, and rolled oats. Mix well. Add the softened butter and mix until crumbly.

      Press half of the mixture into the bottom of the prepared baking dish to form the crust. Bake for 10 minutes until lightly golden.

        While the crust is baking, prepare the lemon filling. In a large bowl, whisk together the eggs and 1 cup sugar until well combined. Stir in the lemon juice, lemon zest, 1/4 cup flour, baking powder, and a pinch of salt until smooth.

          When the crust is ready, pour the lemon filling over the warm crust. Sprinkle the remaining crumb mixture on top of the lemon filling.

            Bake for an additional 25-30 minutes, until the top is lightly golden and the filling is set.

              Remove from the oven and let it cool completely in the pan on a wire rack. Once cool, lift it out using the parchment paper overhang and cut into squares or bars.

                Dust with powdered sugar before serving if desired. Enjoy your zesty treat!
