2 whole trout, cleaned and scaled (about 1 lb each)

2 lemons (one for slices, one for juice)

4 tablespoons fresh dill, chopped (plus extra for garnish)

4 tablespoons olive oil

3 cloves garlic, minced

Salt and pepper, to taste

Optional: lemon wedges for serving

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Trout: Rinse the cleaned trout under cold water and pat them dry with paper towels. Make a few diagonal slashes on each side of the fish to help it cook evenly and absorb flavors.

      Make the Marinade: In a small bowl, mix together olive oil, juice of one lemon, minced garlic, chopped dill, salt, and pepper. This will serve as your marinade.

        Marinate the Trout: Place the trout in a large baking dish. Pour the marinade over the fish, ensuring it gets into the slashes and the cavity. Lay lemon slices inside the cavity of each trout for added flavor. Allow the fish to marinate for at least 15-20 minutes while the oven heats up.

          Bake the Trout: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 20-25 minutes or until the fish is cooked through and flakes easily with a fork.

            Finishing Touches: Once done, remove the foil and let it bake for an additional 5 minutes to slightly crisp the skin. If you prefer an even crispier skin, you can use the broiler for the last couple of minutes, keeping a close eye to prevent burning.
