Lemon Dill Roasted Salmon and Baby Potatoes

4 salmon fillets (6 oz each)

1 lb baby potatoes, halved

3 tablespoons olive oil, divided

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 lemons (1 juiced and 1 sliced)

4 cloves garlic, minced

Salt and black pepper, to taste

1 teaspoon smoked paprika (optional)

Fresh dill sprigs, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes with 2 tablespoons of olive oil, 1 tablespoon of chopped dill, minced garlic, smoked paprika (if using), salt, and black pepper. Toss until the potatoes are well-coated.

      Roast the Potatoes: Spread the seasoned potatoes on a large baking sheet. Roast in the preheated oven for about 20 minutes, or until they start to become tender.

        Prepare the Salmon: While the potatoes are roasting, in a small bowl, mix the remaining tablespoon of olive oil with the juice of 1 lemon, the remaining dill, and salt and pepper to taste.

          Add the Salmon: After the potatoes have roasted for 20 minutes, remove the baking sheet from the oven. Move the potatoes to one side of the baking sheet and place the salmon fillets on the other side. Drizzle the lemon-dill mixture over the salmon and lay lemon slices on top of each fillet.

            Roast Together: Return the baking sheet to the oven and roast everything together for an additional 12-15 minutes, or until the salmon flakes easily with a fork and the potatoes are golden brown and tender.

              Garnish and Serve: Once cooked, remove from the oven and let it cool for a minute. Garnish with fresh dill sprigs and serve hot with your choice of side salad or steamed vegetables.
