1 cup couscous

1 can (15 oz) chickpeas, drained and rinsed

2 cups vegetable broth or water

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 large lemon

Juice of 1 large lemon

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup fresh parsley, chopped

Optional: 1/4 cup feta cheese, crumbled (for garnish)

Optional: Lemon wedges, for serving

Instructions
 

Prepare the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the couscous, stir, and remove it from heat. Cover and let it sit for about 5 minutes, or until the liquid is absorbed. Fluff the couscous with a fork and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant and slightly golden—careful not to burn.

      Add Chickpeas and Spices: Add the drained chickpeas to the skillet. Stir in the cumin, smoked paprika, salt, and pepper. Cook for an additional 5-7 minutes, allowing the chickpeas to absorb the flavors and heat through.

        Combine with Couscous: Add the fluffed couscous to the skillet with the chickpeas. Pour in the lemon zest and lemon juice, mixing everything together gently. Adjust seasoning to taste.

          Garnish and Serve: Turn off the heat and stir in the chopped fresh parsley. If desired, top with crumbled feta cheese for an added creamy texture. Serve warm with lemon wedges on the side.
