8 oz. soba noodles (or your choice of noodles)

2 cups frozen edamame (shelled)

4 cloves garlic, minced

3 tablespoons olive oil

Zest and juice of 1 large lemon

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1/2 teaspoon red pepper flakes (adjust for spice preference)

1/4 cup scallions, finely chopped

1/4 cup fresh cilantro or parsley, chopped (optional)

Salt and pepper to taste

Sesame seeds for garnish (optional)

Cook the Noodles: In a large pot of boiling salted water, cook the soba noodles according to package instructions until al dente, usually about 4-5 minutes. Add the frozen edamame during the last 2-3 minutes of cooking. Once cooked, drain and rinse the noodles and edamame under cold water to stop the cooking process. Set aside.
