1 lb fresh green beans, trimmed

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

1 tablespoon soy sauce (optional)

2 tablespoons slivered almonds (for garnish)

Fresh parsley, chopped (for garnish)

Prepare the Green Beans: In a large pot of boiling salted water, blanch the green beans for 3-4 minutes until they are bright green but still crisp. Drain and immediately plunge them into an ice bath to stop the cooking process. Once cooled, drain again and set aside.

    Heat the Oil: In a large skillet or wok, heat the olive oil over medium-high heat.

      Sauté Garlic: Add the minced garlic to the hot oil and sauté for about 30 seconds or until fragrant. Be careful not to let the garlic brown.

        Stir Fry the Beans: Add the blanched green beans to the skillet. Stir well to coat the beans with garlic and oil. Stir-fry for about 2-3 minutes until the beans are heated through.
