Ingredients

1.5 lb turkey tenderloin

4 cloves garlic, minced

2 lemons (zested and juiced)

3 tbsp olive oil

1 tsp dried oregano

1 tsp dried thyme

1 tsp salt

½ tsp black pepper

1 lb baby potatoes, halved

1 cup green beans, trimmed

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

Prepare the Marinade: In a small bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, oregano, thyme, salt, and black pepper. Mix well to create a marinade.

Marinate the Turkey: Place the turkey tenderloin in a large resealable bag or a shallow dish. Pour the marinade over the turkey, ensuring it's evenly coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to overnight for maximum flavor.

Prepare the Vegetables: While the turkey is marinating, toss the halved baby potatoes with a drizzle of olive oil, salt, and pepper in a bowl. Set aside. Do the same for the green beans - simply toss them lightly with olive oil, salt, and pepper.

Arrange on Baking Sheet: Once the turkey has marinated, remove it from the refrigerator. On a large sheet pan, arrange the turkey tenderloin in the center. Surround it with the seasoned baby potatoes and green beans, ensuring even spacing.

Roast in the Oven: Place the sheet pan in the preheated oven and roast for 25-30 minutes, or until the turkey reaches an internal temperature of 165°F (75°C) and the vegetables are tender and lightly browned.

Rest and Garnish: Once done, remove the pan from the oven, and let the turkey rest for about 5-10 minutes. This allows the juices to redistribute. Slice the turkey and serve alongside the roasted vegetables.

Finishing Touches: Garnish with fresh parsley and lemon slices for an extra burst of flavor. Enjoy your healthy and flavorful lemon garlic turkey tenderloin!
