1 cup fresh lemon juice (about 4-5 lemons)

Zest of 2 lemons

1 cup granulated sugar

2 cups heavy whipping cream, cold

1 teaspoon vanilla extract

1 package (14 oz) graham crackers

1 cup sweetened condensed milk

Make the Lemon Filling: In a medium mixing bowl, combine the fresh lemon juice, lemon zest, and granulated sugar. Whisk until the sugar is completely dissolved.

    Prepare Whipped Cream: In another large mixing bowl, pour in the cold heavy whipping cream and add the vanilla extract. Using an electric mixer, whip on medium-high speed until stiff peaks form (about 2-3 minutes).

      Combine: Gently fold the lemon mixture into the whipped cream until fully incorporated. Be careful to maintain the volume of the whipped cream.

        Assemble the Cake: In a rectangular or square baking dish, start layering the ingredients. Place a layer of graham crackers at the bottom, completely covering the base.
