Ingredients

1 cup plain Greek yogurt

1 cup granulated sugar

4 large eggs

1/4 cup vegetable oil

1 tsp vanilla extract

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

Zest of 1 lemon

1/4 cup lemon juice (freshly squeezed)

Powdered sugar (for dusting)

Fresh berries (for serving, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper for easy removal.

Prepare the Batter: In a large mixing bowl, combine the Greek yogurt, granulated sugar, and eggs. Whisk until smooth and well combined. Add the vegetable oil and vanilla extract, mixing thoroughly.

Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, salt, and lemon zest.

Mix Wet and Dry Ingredients: Gradually add the dry ingredients into the wet mixture, gently folding with a spatula until just combined. Be careful not to overmix! Finally, fold in the lemon juice for a refreshing tang.

Bake the Cake: Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cake: Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Carefully transfer the cake to a wire rack to cool completely.

Serve: Once cooled, dust the top with powdered sugar and serve with fresh berries if desired. Slice and enjoy the light, fluffy texture of your yogurt cloud cake!
