2 cups plain Greek yogurt

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries)

1 cup granola (store-bought or homemade)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey, and vanilla extract. Stir until well blended and smooth.

    Prep the Berries: Rinse the mixed berries under cold water. If using strawberries, slice them into halves or quarters for easier layering. Set aside.

      Layer the Parfait: Take a clear glass or bowl for layering. Start by adding a couple of spoonfuls of the Greek yogurt mixture at the bottom.

        Add Berries: Layer a handful of the mixed berries over the yogurt.

          Add Granola: Sprinkle a layer of granola over the berries.

            Repeat Layers: Continue layering in this order—you can do 2-3 layers depending on the size of your glass—ending with a layer of yogurt on top.

              Garnish: Finish the parfait with a few more berries on the top layer and a sprig of fresh mint for garnish.
