Ingredients

4 (6-ounce) salmon fillets

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 lemons (1 sliced, 1 juiced)

4 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup asparagus, trimmed

4 sheets of aluminum foil

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Foil: Tear off four sheets of aluminum foil, each about 12 inches long.

Season the Salmon: Place a salmon fillet in the center of each foil sheet. Drizzle with olive oil and lemon juice, then season with salt and pepper.

Add Herbs and Garlic: Sprinkle each fillet with minced garlic and fresh dill. Top with a few slices of lemon.

Layer the Veggies: Divide the cherry tomatoes and asparagus evenly among each foil pack, placing them around the salmon. Drizzle a bit more olive oil over the vegetables and season lightly with salt and pepper.

Seal the Packs: Fold the sides of the foil over the salmon and vegetables, sealing them tightly to create a packet. Be sure they're well sealed to trap the steam during cooking.

Bake: Place the foil packs on a baking sheet and bake in the preheated oven for 15-20 minutes, depending on the thickness of your salmon. The salmon should flake easily with a fork when done.

Serve: Carefully open the packets (watch out for hot steam) and transfer the salmon and vegetables onto plates. Garnish with extra dill or lemon slices if desired.

Enjoy: Dig into this light and flavorful meal, perfect for any weeknight dinner!
