Loaded Bacon & Cheese Stuffed Peppers – A Low-Carb Dream!

4 medium bell peppers (any color)

8 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup cooked bacon, chopped (about 8 strips)

2 green onions, finely sliced

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1/2 cup sour cream (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Set the hollowed peppers aside.

      Mix the Filling: In a large mixing bowl, combine the softened cream cheese, cheddar cheese, mozzarella cheese, chopped bacon, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are fully incorporated and form a creamy filling.

        Stuff the Peppers: Generously spoon the bacon and cheese mixture into each prepared pepper, packing it down slightly to fill them completely.

          Arrange in Baking Dish: Place the stuffed peppers upright in a baking dish. If they do not stand nicely, you can trim the bottom slightly (be careful not to cut through) to create a flat base.

            Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. After that, remove the foil and continue to bake for an additional 10-15 minutes until the peppers are tender and the tops are golden and bubbly.

              Serve: Remove from the oven and let the peppers cool slightly. Serve hot with a dollop of sour cream on the side, and garnish with fresh chopped parsley for an extra pop of flavor and color.
