4 large russet potatoes

1 lb sirloin steak, cubed

2 tablespoons olive oil

Salt and black pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup shredded cheddar cheese

1 cup sour cream

1/2 cup crispy bacon bits

1/4 cup green onions, chopped

1/4 cup fresh chives, chopped (optional)

Prep the Potatoes: Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean and dry them with a paper towel. Poke a few holes in each potato with a fork to allow steam to escape. Rub each potato with olive oil and season generously with salt. Place them directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

    Cook the Steak Bites: While the potatoes are baking, heat the olive oil in a large skillet over medium-high heat. Season the cubed sirloin steak with salt, black pepper, garlic powder, and smoked paprika. Once the oil is hot, add the steak bites in a single layer (work in batches if necessary).
