Ingredients

12 oz rotini pasta

1 lb ground beef

1 can (15 oz) sweet corn, drained

1 cup cream cheese, softened

1 cup cheddar cheese, shredded

1/2 cup ranch dressing

1 cup beef broth

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper, to taste

1/2 cup green onions, sliced (for garnish)

1/2 cup crispy bacon bits (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini and cook according to package instructions until al dente. Drain and set aside.

Brown the Ground Beef: In a large skillet over medium heat, add the ground beef. Season with salt, pepper, garlic powder, onion powder, and smoked paprika. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.

Combine Ingredients: In the same skillet, stir in cream cheese, ranch dressing, beef broth, and sweet corn. Mix until fully incorporated and creamy.

Combine Pasta and Sauce: Add the cooked rotini to the skillet. Stir until the pasta is fully coated with the beef and ranch mixture. Fold in half of the cheddar cheese, reserving the other half for topping.

Transfer to Casserole Dish: Transfer the mixture into a greased 9x13-inch casserole dish. Spread evenly.

Add Cheese and Bake: Sprinkle the reserved cheddar cheese on top. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

Garnish and Serve: Remove from the oven and let cool for about 5 minutes. Garnish with sliced green onions and crispy bacon bits, if desired. Serve warm and enjoy your delicious Loaded Cheddar Ranch Beef and Sweet Corn Rotini Bake!
