Ingredients

2 pounds of russet potatoes, peeled and cubed

4 tbsp unsalted butter

1 cup whole milk

1 cup sour cream

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

1 cup crispy cooked bacon, chopped

½ cup green onions, sliced (reserve some for garnish)

1 cup shredded mozzarella cheese

½ cup breadcrumbs (optional, for topping)

Instructions

Boil the Potatoes: In a large pot, add the peeled and cubed russet potatoes. Cover with cold water, add a pinch of salt, and bring to a boil. Cook for about 15-20 minutes, or until fork-tender.

Drain and Mash: Once cooked, drain the potatoes well and return them to the pot. Add the butter, milk, sour cream, garlic powder, onion powder, salt, and pepper. Mash until creamy and smooth.

Mix in the Goodies: Stir in the shredded cheddar cheese, chopped bacon, and half of the green onions. Mix until everything is well combined and the cheese is melted into the mash.

Transfer to the Baking Dish: Preheat your oven to 350°F (175°C). Transfer the cheesy mashed potato mixture into a greased 9x13-inch baking dish, spreading it out evenly.

Top it Off: If you like a crunchy topping, sprinkle the mozzarella cheese evenly over the mashed potatoes. For an extra crunch, you can also add breadcrumbs on top.

Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Remove from the oven, let it sit for a few minutes, then sprinkle the remaining green onions on top for added color and flavor. Serve warm as a delicious side dish!
