Loaded Mashed Potato Bake with Bacon and Cheese

4 large russet potatoes, peeled and diced

6 strips of bacon, cooked until crispy and crumbled

1 cup sharp cheddar cheese, shredded

1 cup sour cream

½ cup cream cheese, softened

½ cup milk

2 tablespoons butter

3 green onions, finely chopped (plus extra for garnish)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

½ cup mozzarella cheese, shredded (for topping)

Instructions
 

Cook the Potatoes: Place the diced russet potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are fork-tender. Drain and return to the pot.

    Mash the Potatoes: Using a potato masher or electric mixer, mash the potatoes until smooth and creamy. Add the butter, sour cream, cream cheese, and milk. Mix until well combined and fluffy. Season with garlic powder, onion powder, salt, and black pepper to taste.

      Add the Goodies: Fold in the crumbled bacon, chopped green onions, and sharp cheddar cheese gently into the mashed potatoes. Reserve some bacon and green onions for garnishing later.

        Preheat the Oven: Preheat your oven to 350°F (175°C).

          Assemble the Bake: Transfer the loaded mashed potato mixture into a greased 9x13 inch baking dish. Spread it evenly and smooth the top.
