Ingredients
  

2 live lobsters (about 1.5 lbs each)

4 cups seafood stock (or chicken broth)

1 cup heavy cream

1 medium onion, diced

2 stalks celery, diced

2 medium carrots, diced

3 cloves garlic, minced

3 medium potatoes, peeled and diced

1 cup corn kernels (fresh or frozen)

1 tablespoon fresh thyme, chopped

1 teaspoon smoked paprika

1 bay leaf

3 tablespoons butter

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Lobster: In a large pot, bring salted water to a boil. Add the live lobsters and cook for 8-10 minutes until bright red. Remove lobsters and let cool. Reserve 2 cups of the cooking water for the chowder. When cool enough to handle, remove the meat from the lobster tails and claws, chop into bite-sized pieces, and set aside. Discard the shells.

    Sauté Vegetables: In a large soup pot, melt the butter over medium heat. Add the diced onion, celery, and carrots. Sauté until the vegetables are translucent, about 5 minutes. Stir in the garlic and cook for an additional minute until fragrant.

      Add Potatoes & Stock: Add the diced potatoes to the pot along with the reserved lobster cooking water and seafood stock. Add the bay leaf, smoked paprika, and fresh thyme. Bring to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.

        Stir in Cream and Corn: Once the potatoes are tender, reduce the heat to low and stir in the heavy cream and corn. Let the chowder simmer gently for another 5 minutes, stirring occasionally.

          Incorporate Lobster Meat: Gently fold in the chopped lobster meat and season with salt and black pepper to taste. Cook for an additional 2-3 minutes until the lobster is warmed through.

            Serve: Remove the bay leaf and ladle the chowder into bowls. Garnish with fresh parsley and serve with lemon wedges on the side. Enjoy your luxurious lobster chowder!
