Ingredients

1 pound elbow macaroni

2 cups fresh lobster meat, cooked and chopped

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and freshly ground black pepper, to taste

1 cup panko breadcrumbs

1/4 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux, cooking for about 2 minutes until golden and bubbly.

Add Milk: Gradually whisk in the whole milk, ensuring there are no lumps. Continue cooking while whisking frequently until the mixture thickens and reaches a simmer, about 5-7 minutes.

Incorporate Cheese: Lower the heat and add the shredded cheddar and Gruyère cheeses to the sauce. Stir until completely melted and smooth. Mix in Dijon mustard, garlic powder, onion powder, salt, and black pepper. Adjust seasoning to taste.

Combine Pasta and Lobster: Gently fold in the cooked macaroni and the chopped lobster meat, ensuring everything is well combined and coated with the cheese sauce.

Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the lobster mac and cheese into a greased 9x13 inch baking dish.

Prepare Topping: In a small bowl, mix together the panko breadcrumbs and grated Parmesan cheese. Evenly sprinkle this mixture over the top of the mac and cheese.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and crispy.

Serve: Remove from the oven and garnish with freshly chopped parsley. Let it sit for a few minutes before serving to allow it to set.
