Low-Carb Bacon Cheeseburger Casserole

Ingredients
  

1 lb ground beef (preferably grass-fed)

6 slices of bacon, chopped

1 small onion, diced

3 cloves garlic, minced

1 cup diced bell peppers (any color)

1 ½ cups shredded cheddar cheese

1 cup heavy cream

4 large eggs

2 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 cup cherry tomatoes, halved (optional for garnish)

Fresh parsley, chopped (optional for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch casserole dish.

    In a large skillet over medium heat, cook the chopped bacon until crispy, then transfer to a plate lined with paper towels, leaving about 1 tbsp of bacon fat in the skillet.

      In the same skillet, add the ground beef, diced onion, and bell peppers. Cook until the meat is browned and the vegetables are tender, about 5-7 minutes. Drain excess grease if necessary.

        Stir in the minced garlic and cook for an additional minute until fragrant.

          In a large bowl, whisk together the heavy cream, eggs, Worcestershire sauce, Dijon mustard, smoked paprika, salt, and black pepper until well combined.

            Layer half of the cooked beef mixture in the bottom of the greased casserole dish. Sprinkle half of the crispy bacon and half of the cheddar cheese on top.

              Pour half of the egg and cream mixture over the layers. Repeat the layers with the remaining ingredients, finishing with the cheese on top.

                Bake uncovered in the preheated oven for 30-35 minutes, or until the casserole is set and the top is golden and bubbly.

                  Once done, let it cool for 5 minutes before slicing. Garnish with halved cherry tomatoes and fresh parsley, if desired.
