Low-Carb Bacon Cheeseburger Casserole

1 lb ground beef (80/20)

6 slices of bacon, chopped

1 small onion, diced

2 cloves garlic, minced

1 cup cauliflower florets (fresh or frozen)

1 cup heavy cream

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

3 large eggs

2 tsp Worcestershire sauce

1 tsp onion powder

1 tsp garlic powder

Salt and pepper, to taste

1/4 cup dill pickles, chopped (optional, for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until it is crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain. Leave about 1 tablespoon of bacon fat in the skillet.

      Brown the Beef: In the same skillet with the remaining bacon fat, add the ground beef. Cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain excess grease if necessary.

        Sauté the Vegetables: Add the diced onions and minced garlic to the skillet with the browned beef. Sauté for 3-4 minutes or until the onion is translucent. Stir in the cauliflower florets and cook for another 2 minutes.

          Combine Ingredients: In a large mixing bowl, whisk together the heavy cream, eggs, Worcestershire sauce, onion powder, garlic powder, salt, and pepper. Add the cooked beef and vegetable mixture and stir until everything is well combined.

            Add Cheeses: Fold in half of the cheddar cheese and half of the mozzarella cheese into the mixture. Stir in the crispy bacon, reserving a small amount for topping.

              Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it evenly.

                Top with Cheese and Bacon: Sprinkle the remaining cheddar and mozzarella cheese on top, followed by the reserved bacon bits.

                  Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                    Garnish and Serve: Remove from the oven and allow to cool for a few minutes. If desired, garnish with chopped dill pickles and fresh parsley before serving.
