1 medium head of cauliflower, chopped into florets

1 large egg

1 cup shredded mozzarella cheese

1/3 cup almond flour

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Olive oil spray (for baking)

Instructions
 

Steam the Cauliflower: Start by steaming the chopped cauliflower florets until they are tender, about 7-10 minutes. Once cooked, drain thoroughly to remove excess moisture.

    Mash and Cool: In a large mixing bowl, mash the steamed cauliflower using a potato masher or fork until smooth. Allow the mixture to cool for a few minutes.

      Mix Ingredients: Once the cauliflower has cooled, add the egg, mozzarella cheese, almond flour, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix everything together until well combined.

        Shape Tots: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. With your hands, take small portions of the mixture and shape them into small tot shapes or balls, placing each on the prepared baking sheet.

          Bake: Once all the tots are shaped, lightly spray them with olive oil. Bake in the preheated oven for 20-25 minutes, flipping them halfway through, until they are golden brown and crispy on the outside.
