Low-Carb Zucchini Pizza Boats

Ingredients
  

4 medium zucchinis

1 cup marinara sauce (sugar-free)

1 cup shredded mozzarella cheese

1/2 cup cooked Italian sausage (or ground beef, turkey, or a vegetarian option)

1/2 cup sliced bell peppers (red, green, or yellow)

1/4 cup sliced black olives

1/4 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon garlic powder

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Wash the zucchinis and cut them in half lengthwise. Use a spoon to scoop out the seeds and some of the flesh, creating a boat shape. Be careful not to break the sides.

      Season the Zucchini: Lightly sprinkle salt inside each zucchini boat and place them cut-side down on a baking sheet. Bake in the oven for 10-15 minutes to soften the zucchini slightly. Remove and let cool for a few minutes.

        Cook the Protein: If not already done, cook the Italian sausage (or your chosen protein) in a skillet over medium heat, breaking it apart until it’s browned and fully cooked. Drain any excess fat and set aside.

          Combine Toppings: In a mixing bowl, combine the cooked protein, marinara sauce, half of the mozzarella, bell peppers, olives, oregano, basil, garlic powder, and a pinch of salt and pepper. Mix well to combine all the flavors.

            Fill the Zucchini Boats: Turn the zucchini boats cut-side up and generously fill each zucchini with the mixture. Top each filled boat with the remaining mozzarella and a sprinkle of Parmesan cheese.

              Bake Again: Return the filled zucchini boats to the oven and bake for an additional 20-25 minutes, or until the cheese is bubbly and golden and the zucchini is tender.

                Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm as a delicious low-carb meal!
