1 cup all-purpose flour

1/2 cup whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/3 cup brown sugar

1/4 cup olive oil

1/2 cup balsamic vinaigrette (store-bought or homemade)

2 large eggs

1/2 cup finely chopped spinach

1/4 cup crumbled feta cheese

1/4 cup walnuts, chopped (optional)

1 tsp dried Italian herbs (oregano, basil, or thyme)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and brown sugar until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the olive oil, balsamic vinaigrette, and eggs until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients, gently folding them together with a spatula or spoon until just combined. Be careful not to overmix; a few lumps are okay.

          Add Spinach and Cheese: Incorporate the finely chopped spinach, crumbled feta cheese, walnuts (if using), and dried herbs into the batter, folding them in gently.

            Fill Muffin Tins: Using a scoop or spoon, fill each muffin cup about 2/3 full with batter.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool: Once baked, remove the muffins from the oven and allow them to cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
