1 cup rolled oats

1 cup milk (or dairy-free alternative)

1 1/2 cups all-purpose flour

1/2 cup brown sugar, packed

1/4 cup pure maple syrup

1/4 cup unsalted butter, melted (or coconut oil for dairy-free)

1 large egg

1 teaspoon vanilla extract

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup chopped nuts (walnuts or pecans, optional)

1/2 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly to prevent sticking.

    Soak Oats: In a medium bowl, combine the rolled oats and milk. Let this mixture soak for about 15 minutes to allow the oats to soften.

      Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, brown sugar, baking powder, salt, and ground cinnamon. Make sure they are evenly combined.

        Combine Wet Ingredients: In the bowl with soaked oats, add the melted butter, maple syrup, egg, and vanilla extract. Stir until everything is well mixed and smooth.

          Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients. Gently fold together until just combined. Be careful not to overmix; a few lumps are okay.

            Add Mix-Ins: If desired, gently fold in the chopped nuts and raisins or cranberries into the batter.
