Ingredients

1.5 lbs Brussels sprouts, trimmed and halved

3 tablespoons olive oil

3 tablespoons pure maple syrup

2 tablespoons Dijon mustard

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

1/4 cup chopped pecans (optional, for added crunch)

2 tablespoons balsamic vinegar (for drizzling before serving)

Instructions

Preheat oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

Prepare the Brussels sprouts: In a large mixing bowl, combine the halved Brussels sprouts with olive oil, maple syrup, Dijon mustard, garlic powder, salt, black pepper, and red pepper flakes. Toss everything together until the Brussels sprouts are evenly coated.

Spread and roast: Spread the coated Brussels sprouts in a single layer on the prepared baking sheet. Ensure they’re not overcrowded to allow for even roasting.

Roast: Roast in the preheated oven for 20-25 minutes, or until the Brussels sprouts are tender and caramelized. Halfway through the roasting time, give them a good toss to ensure even cooking.

Add pecans: If you’re using chopped pecans, add them to the baking sheet during the last 5 minutes of roasting for a delightful crunch.

Finish and serve: Once roasted, remove the Brussels sprouts from the oven and drizzle with balsamic vinegar for added flavor. Serve warm as a side dish or a delightful addition to your salad!
