1 lb baby carrots (peeled)

3 tablespoons maple syrup

2 tablespoons unsalted butter

1 tablespoon olive oil

½ teaspoon sea salt

¼ teaspoon black pepper

¼ teaspoon cinnamon (optional)

1 tablespoon chopped fresh parsley (for garnish)

Instructions
 

Prepare the Carrots: Rinse the baby carrots under cold water and pat them dry. If using regular carrots, slice them into evenly-sized sticks, about 1/2 inch thick.

    Heat the Pan: In a large skillet, melt the butter and olive oil over medium heat until the butter is fully melted and starts to bubble slightly.

      Add Carrots: Carefully add the carrots to the pan, stirring to coat them in the butter and oil mixture.

        Season: Sprinkle the sea salt, black pepper, and cinnamon (if using) over the carrots. Stir to combine.

          Glaze: Pour the maple syrup over the carrots, then reduce the heat to medium-low. Cover the skillet with a lid and let the carrots cook for about 10-12 minutes, stirring occasionally, until they are tender and glistening.

            Caramelize: Remove the lid, increase the heat to medium-high, and cook for an additional 3-5 minutes, allowing the glaze to thicken and caramelize slightly. Make sure to stir frequently to prevent sticking.

              Serve: Once the carrots are beautifully glazed and tender, remove from heat. Transfer them to a serving dish and garnish with chopped fresh parsley for a pop of color.
