Maple Glazed Chicken & Squash Sheet Pan

4 boneless, skinless chicken thighs

1 medium butternut squash, peeled and cubed

2 cups Brussels sprouts, trimmed and halved

1 red onion, cut into wedges

3 tablespoons olive oil

1/4 cup pure maple syrup

2 tablespoons Dijon mustard

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh thyme, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Prepare the Vegetables: In a large bowl, combine the cubed butternut squash, halved Brussels sprouts, and red onion. Drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss until everything is evenly coated.

      Prepare the Chicken: In a separate small bowl, whisk together the maple syrup, Dijon mustard, garlic powder, smoked paprika, and remaining olive oil. This will create your glaze.

        Combine and Glaze: Place the chicken thighs on one half of the sheet pan. Pour half of the maple glaze over the chicken, making sure to coat it thoroughly. Spread the prepared vegetables on the other half of the pan.

          Bake: Roast in the preheated oven for about 25-30 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender and caramelized.

            Finish and Serve: Drizzle the remaining maple glaze over the chicken and veggies, and return the pan to the oven for an additional 5 minutes to caramelize the glaze. Remove from the oven, garnish with fresh thyme if desired, and serve hot.
