3 large sweet potatoes, peeled and diced (about 2 pounds)

1/2 cup pecans, roughly chopped

1/4 cup pure maple syrup

1/4 cup unsalted butter (or vegan butter)

1/2 cup milk (or non-dairy milk of choice)

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Salt and pepper to taste

Fresh pecans and maple syrup for garnish (optional)

Instructions
 

Cook Sweet Potatoes: In a large pot, bring salted water to a boil. Add the diced sweet potatoes and cook for about 15-20 minutes, or until they are tender and easily pierced with a fork. Drain well.

    Toast Pecans: While the sweet potatoes are cooking, toast the pecans in a dry skillet over medium heat for 3-5 minutes, stirring frequently until they are golden and aromatic. Remove from heat and set aside.

      Mash Sweet Potatoes: In the same pot used for cooking, add the drained sweet potatoes back in. Use a potato masher or fork to begin mashing the sweet potatoes until smooth.

        Combine Ingredients: After the sweet potatoes are mashed, add the butter, milk, maple syrup, ground cinnamon, ground nutmeg, and a good pinch of salt and pepper. Mix well until everything is combined and creamy. Adjust the milk to reach your desired consistency.

          Add Pecans: Gently fold in the toasted pecans, reserving a few for garnish if desired.

            Taste and Adjust: Taste the mash and adjust the sweetness or spices according to your preference. You can add more maple syrup or spices as needed.
