Maple Roasted Vegetable Frittata

1 cup butternut squash, diced

1 cup Brussels sprouts, halved

1 red bell pepper, diced

1 small red onion, diced

2 tablespoons olive oil

2 tablespoons maple syrup

Salt and pepper to taste

6 large eggs

1/4 cup milk (or plant-based milk)

1/2 teaspoon smoked paprika

1/4 cup crumbled feta cheese (optional)

Fresh thyme or parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a mixing bowl, combine the diced butternut squash, halved Brussels sprouts, diced red bell pepper, and diced onion. Drizzle with olive oil, maple syrup, salt, and pepper. Toss until the vegetables are well-coated.

      Roast the Vegetables: Spread the vegetable mixture evenly on a baking sheet and roast in the preheated oven for about 20-25 minutes or until the vegetables are tender and slightly caramelized. Stir halfway through for even roasting.

        Whisk the Eggs: While the vegetables roast, whisk together the eggs, milk, smoked paprika, and a pinch of salt and pepper in a large bowl until well combined.

          Combine: Once the vegetables are roasted, take them out of the oven and transfer them into a greased oven-safe skillet or baking dish. Pour the egg mixture evenly over the vegetables, allowing it to settle into the spaces.

            Add Cheese: If using, sprinkle crumbled feta cheese over the top.

              Bake the Frittata: Return the skillet or baking dish to the oven and bake for 25-30 minutes, or until the edges are set and the center of the frittata is slightly puffed and golden.

                Cool & Serve: Remove the frittata from the oven and let it cool for a few minutes. Garnish with fresh thyme or parsley before slicing. Serve warm or at room temperature.
