2 large cucumbers, thinly sliced

1 medium red onion, thinly sliced

3 medium ripe tomatoes, chopped into wedges

1/4 cup white vinegar

1/4 cup olive oil

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley or basil, for garnish

Instructions
 

In a large bowl, combine the cucumbers, red onion, and tomatoes.

    In a separate small bowl, whisk together the white vinegar, olive oil, honey (or maple syrup), Dijon mustard, garlic powder, dried oregano, salt, and pepper until well combined.

      Pour the dressing over the cucumber, onion, and tomato mixture. Toss gently to ensure all the vegetables are coated evenly with the marinade.

        Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 1 hour to allow the flavors to meld (marinating longer is even better!).

          Before serving, give the salad a good toss and adjust seasoning if necessary. Garnish with fresh parsley or basil.
