1 cup fresh raspberries (plus extra for garnish)

1 ½ cups heavy whipping cream

8 ounces semi-sweet chocolate, finely chopped

1 teaspoon vanilla extract

2 tablespoons powdered sugar

1 tablespoon gelatin

2 tablespoons cold water

Prepare the gelatin: In a small bowl, combine the gelatin and cold water. Let it sit for about 5-10 minutes until it blooms (absorbs the water and becomes gel-like).

    Melt the chocolate: Place the chopped chocolate in a microwave-safe bowl. Heat it in the microwave in 30-second intervals, stirring in between, until completely melted and smooth. Allow it to cool slightly.

      Whip the cream: In a large mixing bowl, add the heavy whipping cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, whip the cream until stiff peaks form. Be careful not to over-whip.

        Incorporate the gelatin: Gently heat the bloomed gelatin in the microwave for about 5-8 seconds until it's liquid again (do not boil). Stir it into the melted chocolate until fully combined. Allow this mixture to cool slightly.

          Combine chocolate and cream: Once the chocolate-gelatin mixture is slightly cooled but not hardened, gently fold it into the whipped cream. Use a spatula to mix until there are no streaks of cream left.

            Add the raspberries: Gently fold in the fresh raspberries, reserving a few for garnishing. Try not to break them up too much; you want to maintain some whole berries in the mousse for added texture.
