Ingredients
  

4 salmon fillets (6 oz each, skin-on)

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup heavy cream

1/2 cup chicken broth

1 teaspoon Dijon mustard

1 tablespoon lemon juice

Zest of 1 lemon

1 teaspoon dried thyme (or 2 teaspoons fresh)

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: Parmesan cheese for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sear the Salmon: In a large oven-proof skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and pepper on both sides. Place skin-side down in the skillet and sear for about 4-5 minutes without moving them, until the skin is crispy and golden. Carefully flip the fillets and cook for another 2-3 minutes. Remove the salmon from the skillet and set it aside on a plate.

      Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.

        Create the Sauce: Reduce the heat to medium-low. Pour in the heavy cream and chicken broth, then stir in the Dijon mustard, lemon juice, lemon zest, and thyme. Allow the sauce to simmer for 3-4 minutes, letting it thicken slightly. Taste and adjust seasoning with salt and pepper.

          Combine Salmon and Sauce: Return the salmon fillets to the skillet, spooning some of the sauce over the top to coat the fish.

            Bake: Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.

              Serve: Remove from the oven and let it rest for a couple of minutes. Garnish with fresh basil leaves. If desired, sprinkle with grated Parmesan cheese for an extra layer of flavor.
