Ingredients

4 cups mashed potatoes (homemade or store-bought)

1 cup sour cream

1 cup shredded cheddar cheese (plus more for topping)

1/2 cup cream cheese, softened

1/2 cup milk

1/4 cup unsalted butter, melted

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1/2 cup sliced green onions (for garnish)

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Mix the Base: In a large mixing bowl, combine the mashed potatoes, sour cream, cheddar cheese, cream cheese, milk, melted butter, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well incorporated and the mixture is smooth.

Transfer to Casserole Dish: Grease a 9x13 inch casserole dish with a bit of butter or non-stick spray. Pour the mashed potato mixture into the dish and spread it evenly.

Add Toppings: If desired, sprinkle more shredded cheddar cheese over the top. For a crispy texture, you can add a layer of breadcrumbs before the cheese.

Bake: Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Remove the casserole from the oven and let it sit for 5 minutes. Garnish with sliced green onions and chopped parsley before serving.

Enjoy: Serve hot as a delicious side dish or a main vegetarian dish.
